I took this picture because I really hate it when people block the sidewalk. Fortunately I don't have any mobility issues, but for people who do, blocking the sidewalk makes life difficult.

Imagine my surprise walking back this way the next morning, and at this exact spot passing a woman in a motorized scooter. She grabbed my arm, and said: "Do you know, when I was here last night there was a car blocking the sidewalk!" I informed her that I had noticed it too, and had photographed it. "You know," she said, lowering her voice, leaning in secretly. "I kicked that car when I passed by it."

"Did you leave a dent?" I joked.

"No, but if it happens again, I'm gonna let the air out of his tires!"

Locust tree in winter

I'm not sure if it's the honey locust or black locust. Interestingly, the tree developed the thorns to prevent grazing by the megafauna during the Pleistocene era.

This tree is on the obscure corner of Brickhill and Wellington. There is a lot of construction happening here. I suspect new condos will rise from the previous parking lots. Condo dwellers probably don't like pointy trees; I presume this tree's days are numbered.

This photo highlights one of my faults as a photographer. I conceptualize a photo: I can see exactly what I want in my head. But I can't always follow-through with the realities. I imagined setting the self-timer on the camera to take a photo every 10 seconds for the entire class. In my head I visualized a photo filled with feet moving so fast (and in unison) that they blurred.

Reality: a camera that won't do the self-timer the way I want it to. Reality: I am too chicken to ask several members of the class to dance for me in unison while I photograph them.

Argh.

Tamale Pie

Tamale Pie

Yield: 6 servings
Time: 1 hour 20 minutes

Tools

knife
wok, Dutch oven, or large saucepan
wooden spoon
whisk
8-inch square baking dish
2 bowls

Ingredients

3 T vegetable oil
2 c onions, chopped
2-3 cloves garlic, minced
1 t salt
1 fresh green chile*, minced OR 2 t minced chipotles in adobo sauce
2 t ground cumin
2 c water
1 c green beans, de-stemmed and diced
2 c potatoes, in ¾-inch cubes
2-3 c sweet potatoes, carrots, or butternut squash, in ¾-in cubes
1 T lime or lemon juice
1 c cheddar cheese, grated
1 c cornmeal
2 T white flour
1½ t baking powder
½ t baking soda
½ c corn (fresh, canned, or frozen)
½ c red bell pepper, diced
2 T fresh cilantro, minced
2 eggs
½ c buttermilk

Directions

Heat 1 T oil and sauté onions, garlic, ½ t salt, and chile about 10 minutes, stirring frequently, until the onions begin to brown.

Preheat oven to 350.

Add cumin, water, green beans, potatoes, and sweet potatoes and bring to a boil. Reduce heat and let simmer about 20 minutes, until tender. Stir in lime juice and pour into lightly-oiled baking dish.

While the potatoes are cooking, combine cornmeal, flour, baking powder and soda, remaining ½ t salt, corn, bell peppers, and cilantro in one bowl, and whisking the eggs, buttermilk, and remaining 2 T oil together in the other. Combine the wet into the dry, folding until just mixed.

Sprinkle cheddar cheese on top of the vegetable mixture in the baking dish, then spread the egg/cornmeal mixture evenly on top.

Bake 30 minutes, until a knife or toothpick inserted into the cornmeal topping comes out clean. Serve hot.

Best Soup Ever

Spicy Vegetarian Tortilla Soup Recipe

Spicy Vegetarian Tortilla Soup Recipe

INGREDIENTS:
2 tbsp olive oil
1 large red onion, chopped
6 garlic cloves, minced
3 jalapeno peppers, seeded and chopped
1 tbsp cumin seed
1 cup frozen corn kernels
2 29 ounce cans vegetable broth
2 16 ounce cans kidney beans, rinsed and drained
1/3 cup chopped fresh cilantro, packed
1 cup shredded low-fat Monterey Jack cheese
6 corn tortillas
cooking spray
low-fat sour cream
lime wedges

PREPARATION:
Add olive oil, onion, garlic, jalapeno and cumin seed to a large pot over medium heat, stir constantly for 5 minutes. Add corn, vegetable broth, beans and cilantro.

Reduce heat, cover and simmer for 10 minutes.

Heat oven to 450 degrees. Coat cookie sheet with cooking spray, place tortillas on sheet and spray tortillas with cooking spray. Cook approximately 10 minutes. Cut tortillas into strips.

Top soup with cheese, tortilla strips and a dollop of sour cream. Garnish with lime.
